The TIE GUAN YIN from Taiwan is interrupting the fermentation of the very gently hand-rolled tea leaves in roasting pans. It is roasted stronger here and is therefore darker than in its original home Anxi in Quanzhou. Traditionally, the Tieguanyin tea is produced exclusively as oolong tea.
